The hemp flavour is extracted from the plant by distillation, passing vapour through a tank filled with hemp. After the vapour condenses, a fine essential oil film is collected from the surface of the water.
When the hemp is with fully matured, its odour can be smelt over a kilometre away from Ecoteaux.
1000 kg of hemp are needed to produce 1.5 litres of essential oil. One hectare of hemp produces approximately 20 litres of this precious aroma, which, accompanied in the cheese by the other spices, aromatic herbs and hemp leaf powder, gives it this exceptional and inimitable taste.
The hemp is produced and distilled on Mr. Olivier Sonnay’s farm in Ecoteaux, the same village in which the Prince Canna cheese is made.
The culture of the hemp and its distillation are regularly controlled by government services.
The extracts of hemp used for the manufacturing of Prince Canna are analyzed by the Vaudois cantonal laboratory and reply to strict legislation concerning foodstuffs.
